Ingredients:
- 1 medium head of cabbage
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup breadcrumbs (panko or traditional)
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- Salt and pepper to taste
- Oil for frying (vegetable or sunflower oil)
Instructions:
- Prepare the Cabbage:
- Remove outer leaves and cut the cabbage into thick slices or wedges (about 1-inch thick).
- Blanch the cabbage slices in boiling salted water for 3–5 minutes until slightly softened but still firm. Drain and pat dry.
- Set Up Breading Station:
- Bread the Cabbage:
- Dip each cabbage slice in flour, coating all sides.
- Place the flour in the first bowl.
- Beat the eggs with a pinch of salt in the second bowl.
- Mix breadcrumbs with garlic powder, paprika, salt, and pepper in the third bowl.
- Next, dip it into the beaten eggs, allowing excess to drip off.
- Finally, coat it in the breadcrumb mixture, pressing gently to adhere.
- Fry the Schnitzels:
- Heat about 1/4 inch of oil in a large skillet over medium heat.
- Fry the breaded cabbage slices in batches for 3–4 minutes per side until golden brown and crispy.
- Transfer to a paper towel-lined plate to drain excess oil.
- Serve:
- Serve hot with lemon wedges, sour cream, or a creamy dipping sauce. Pair it with mashed potatoes or a fresh salad for a complete meal.
Enjoy this crispy, golden twist on schnitzel!
