Cabbage Slaw

Ingredients:

  • 4 cups green and/or red cabbage, thinly shredded
  • 1 carrot, julienned or shredded
  • 1/4 cup red onion, thinly sliced (optional)
  • 2 tablespoons fresh parsley or cilantro, chopped

For the Dressing:

  • 1/4 cup mayonnaise (or Greek yogurt for a lighter version)
  • 1 tablespoon apple cider vinegar or white vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or sugar
  • Salt and black pepper, to taste

Instructions:

  1. Prepare the Vegetables:
    In a large bowl, combine the shredded cabbage, carrot, red onion, and parsley.
  2. Make the Dressing:
    In a small bowl, whisk together mayonnaise, vinegar, Dijon mustard, honey, salt, and pepper until smooth.
  3. Combine:
    Pour the dressing over the cabbage mixture and toss until evenly coated.
  4. Chill and Serve:
    Refrigerate for at least 15 minutes to allow the flavors to meld. Serve cold or at room temperature.
